Deliciousness in a Bowl


We love this dish because it is not only light and healthy but so yummy.
We can have this Summer or Winter as often as you want

Ingredients:

  • 1 bag of glass noodles
  • 1 Cucumber
  • 1-2 Carrots
  • 2 cloves of garlic
  • 3/4 cup of Ponzu Sauce (or as desired)
  • 3/4 cup of Fish Sauce (or as desired)
  • 2 tbsp Sesame Seed oil
  • 1-2 Limes
  • 1/2 cup chopped mint or cilantro

The noodles can vary in size so it just depends on which you prefer.
I put them in boiling water to prepare them quicker than letting them sit in hot water like the package says. If you put in boiling water it will only need it for a couple of minutes otherwise the noodles get over cooked.

Carrots- I just use a cheese shredder and get the carrots in a small thin cut which makes them easier to eat

Cucumber- I slice it as thinly as possible. You can do this however you wish.

Cilantro or mint depends on your preference and what flavor you are doing. We have tried both and it is just as delicious either way

For the sauce, I use the ponzu sauce, fish sauce, lemon and garlic. Usually you use measurements but with this specific one you can go according to taste. You can put a little more of whichever one you want more of and same with the garlic.

It is the easiest and quickest recipe, and what we have done is coat the rice noodles in sesame seed oil and store in the fridge along with extra veggies and any time you are feeling hungry you can have a dish ready to eat within a few minutes.
