Crispy Parmesan Chicken with Lemon Butter Pasta


CRISPY PARMESAN CHICKEN with LEMON BUTTER PASTA

Prep Time: 15 Mins / Cook Time: 15 mins

INGREDIENTS
2 chicken breasts (depending on how many people you are cooking for)
6 TBSP of butter
½ cup of Italian bread crumbs
½ cup of grated Parmesan cheese
¼ cup of flour

Creamy Lemon Butter pasta
8oz pasta of choice. I love angel hair pasta
(makes it seem like a lighter meal)
Original recipe calls for heavy cream.
I went with one can of Thai Coconut Cream
½ a cup of grated Parmesan cheese
(if you love cheese feel free to add more)
Juice of one lemon
1 teaspoon of garlic powder
Fresh garlic minced
(I added this because fresh is always tastier. Add however much you would enjoy)
Salt and pepper to liking

CHICKEN PREP
Melt the butter and place in one dish
Cut the chicken breasts in half and coat in the butter
Next dip In the mixture of the bread crumbs, cheese and flour until completely covered
Place in pan over medium heat with a small coat of butter to crisp the chicken

PASTA PREP
Cook pasta according to direction on packaging and drain. I rinse with cold water to avoid it sticking together
If you are using fresh garlic. Place the minced fresh garlic and toast until you smell the garlic without burning it
In the same skillet as the fresh garlic mix in your choice of cream with Parmesan cheese, lemon juice, garlic powder, salt and pepper
Cook over medium to high heat Add more cheese if you like it cheesy or want to thicken the sauce a bit
Add pasta to coat it in the sauce

Add the chicken and garnish as desired and you have yourself a quick and yummy meal
I love veggies so I added broccolini and asparagus seasoned with salt and pepper
